Ruby beet microgreens are vibrant, nutrient-dense greens that add bold colour and earthy flavour to your meals. They are grown as microgreens in trays and are prized for both their visual appeal and nutritional value. Not recommended for growing as a sprout.

🌿 Nutritional Profile

Ruby beet microgreens contain vitamins A, C, E, and K, and are especially rich in vitamin K. They also provide essential minerals including calcium, iron, magnesium, manganese, potassium, and zinc. Their deep red colour reflects the presence of beneficial plant compounds that support overall vitality.

Seed Storage: To prolong viability, store seeds in the refrigerator. For long-term storage, seeds may be kept in the freezer.

🌱 Soaking & Sowing Instructions (Tray Method)

Note: Beets must be grown as a microgreen, not a sprout. We do not recommend them for beginners as they can be prone to damping off.  Presoak for 5 minutes in 1/2 tsp white vinegar per cup of fresh water as a preventative, and do not over water.

  • Days to Sprout: 8–12 days
  • Soak Time: 4–6 hours
  1. Soak: Soak beet seed for 4–6 hours.
  2. Prepare Soil: Use a good quality organic starting soil mix. Soil should be moist, not wet (when squeezed in your hand, you should not get more than a drop of water).
  3. Fill Tray: Use a tray with holes and fill with approximately 3/4"–1.5" of soil. Smooth and flatten without compacting.
  4. Sow: Spread soaked seed evenly in a single layer (side by side, mostly not overlapping). Break up clumps as needed.
  5. Cover: Cover to prevent drying out (use a dome/lid or an inverted tray). If stacking, place a layer directly on the seed (parchment, plastic sheet, or damp unbleached paper towel).
  6. Stack & Weight: Stack trays and add weight to encourage strong rooting and even germination. Stack beet microgreens for 4 days, checking daily for moisture.
  7. Light: After the stacking period, expose to indirect sunlight, fluorescent/LED, or grow lights.
  8. Water: Keep soil moist, not wet. Once unstacked, watering from below is recommended (add water to the bottom tray with no holes as needed).
  9. Harvest: Harvest beet microgreens at 12–21 days with scissors or a sharp knife.

🌬 Harvest & Storage

  • Harvest when microgreens are dry (avoid harvesting right after watering).
  • If needed, gently dry before refrigerating.
  • Store in a sealed container lined with a paper towel for moisture control.
  • Replace the paper towel as needed if damp.

Properly harvested and stored microgreens stay fresh up to 7–10 days in the refrigerator.

  • Recommended seeding rate: 50–70 grams per standard 10×20 tray.
  • At 50 g per tray, one 75 g bag seeds approximately 1.5 trays.
